Making of Vegan 🌱 Yellow Mung Stew
Main Ingredients
Yellow Mung Beans (Moong Dal) 1 cup
Bell pepper 1 medium size
Green chilli 2
Ginger 1 inch
Coriander leaves
Lemon 🍋 1/2
Turmeric powder a pinch
Ghee 4 tbsp
Mustard 1 tbsp
Salt 🧂 to taste
Sugar to taste
Water
Mung beans pressure cook
Take a bowl and rise mung beans very well
Add sliced green chilli, turmeric powder and water
Pressure cook for 4-5 whistles, switch off the flame
Pressure cooked mung beans, looking very nice and will have a nice aroma when backed
Nicely Smash the mung beans with a smasher and keep it aside
Vegan Yellow Mung Stew process
Take a tawa and add 2 tbsp ghee, heat it on a medium flame
Add 1 tbsp mustard and let it pop out
Now add sliced green chilli and saute
Add ginger paste and saute till aroma goes off
Now add finely chopped bell pepper and saute for few seconds
Add turmeric, salt 🧂 and saute
Now pour the baked mung beans and fry for 2 minutes on a low flame
Add water 💦 and mix well
Now add two tbsp ghee and saute
Check the taste, salt 🧂 and sugar and give a good mix on a medium flame
Saute for 2-3 minutes and bring it to boil
Switch off the flame and move the mix to a bowl 🍲
Squeeze lemon 🍋 and mix well
Garnish with finely chopped coriander leaves and serve hot
