Sambar Vada

Sambar Vada is an all time favourite recipe. Its a delicious combination with a crispy vada soaked with lentil, spices mix sauteed and boiled sambar and added finely chopped raw onion and coriander leaves will be a yummy combo.

Note: Vada Batter soaked overnight in room temperature will give a Double Crispy Vada

Making of Crispy Instant Vada





Ingredients for Vada:

  1. Urad Dal 1 cup

  2. Fenugreek Seed 1 tbsp

  3. Pepper 1 tbsp

  4. Curry leaves 1 tbsp

  5. Salt to taste

  6. Water

  7. Asafoetida 1/2 tbsp

Ingredients for Sambar:

  1. Masur dal 1 cup

  2. Onion 2 medium finely chopped

  3. Tomato 1 medium finely chopped

  4. Capsicum finely chopped or churned (optional)

  5. Ginger 1 inch

  6. Garlic 5 cloves

  7. Sambar powder 2 tbsp

  8. Coriander leaves finely chopped

  9. Red chilli 2

  10. Mustered seed

  11. Green chilli

  12. Turmeric powder a pinch

  13. Oil 2 tbsp

  14. Water 1 cup


Making of Sambar for Sambar Vada


Dal Backing

  1. Wash and rinse masur dall

  2. Take a bowl and add a cup of washed masur dal and fill with one cup of water

  3. Add turmeric and sliced green chilli with masur dal

  4. Keep a pressure cooker on the stove and keep this masur dal and cover the cooker

  5. Cook dal for 5-6 whistles

  6. Switch off the flame and keep it aside

Sambar Mix

  1. Take a tawa add oil and keep in on a medium flamed stove

  2. When the oil gets hot add 1 tbsp mustard seed and let is pops out

  3. Now add finely chopped onion and saute till it gets translucent

  4. Now add red chilli, salt and saute for a few seconds

  5. Add ginger garlic paste and saute till the aroma goes off

  6. Add finely chopped tomato and saute till the sides gets moisture with oil

  7. Add the finely chopped or slightly churned in a mixer grinder (not to grind it to a smooth paste) and saute. This will give added flavour to the sambar.

  8. Now add sambar powder and saute for a few seconds

  9. Smash backed masur dal with a masher, add and saute for 2-3 minutes

  10. Add water and let it boil for 5 minutes, check for taste and add salt if required

  11. Sambar is ready, switch off the flame and keep it aside


Vada Making


Prepare the Vada Batter

  1. Soak 1 cup of Urad Dal and Fenugreek Seed overnight in room temperature (This can be done instantly by soaking the batter at-least for 3 hours)

  2. Next day Morning grind it to a smooth paste by adding very little water only if required. Don't add too much of water 

  3. Now In the batter add salt as per taste, peppercorns, asafoetida and fresh curry leaves and give a good mix


  • Take a tawa, pour oil and heat it on a medium flame



  • Take the batter into a size of a patty , flatten it on the base of a stainless steel filter (refer image)


  • Make a hole on the flattened batter with your index finger







  • When the oil is hot place it in the oil












  • Fry till the vada gets golden crispy, turn sides to fry vada on both sides


  • Do the same step to fry more vadas


  • Crispy Vada Ready !!! Lets be ready for Sambar Vada



Preparing Sambar Vada


  • Take a cup and add the freshly prepared sambar

  • Mix freshly and finely chopped onion in the sambar

  • Add crispy fresh Vada

  • Sprinkle fresh and finely chopped coriander leaves

  • Sambar Vada Ready, this will be amazingly delicious!!!!
