Making of Melting White Pumpkin ๐ŸŽƒ Mash

Main Ingredients:

  1. White Pumpkin ๐ŸŽƒ 2 cups

  2. Sugar 1/2 cup

  3. Cashews 15

  4. Cardamom 2 tbsp

  5. Raisins (Kismis)

  6. Ghee 4 tbsp

  7. Saffron

  8. Food Colour(Optional)

Preparing White Pumpkin

  1. Cut and peal the pumpkin skin

  2. Grate using grater or mixer grinder

  3. Keep it aside

  4. Water will get squeezed while grating, keep that and use in soup or drink fresh, very healthy

Cashew Roast

  • Take a tawa and add 1 tbsp ghee on a low flame

  • Add cashews and fry till golden

  • Add raisins and saute for few seconds

  • Take out of tawa and keep it aside

White Pumpkin Mash Process

  1. Take a tawa and add 1 tbsp ghee on a medium flame

  2. Add the grated white pumpkin and sate for 2-3 minutes

  3. Cover it and let it get cooked for 15 - 20 minutes

  4. Check and saute frequently not to get stick and burnt

  5. Saute till the water gets dried and the pumpkin gets cooked

White Pumpkin Mash final Process

  1. When cooked and dried add 1/2 cup sugar and mix well (sugar can be more for more sweetness, add 1/2 cup more if required)

  2. Let it gets cooked for 10 minutes till it gets thicken

  3. Check and saute frequently

  4. Now add 2 tbsp ghee and saute for few seconds

  5. Add Saffron, Cardamom powder and food colour and give a good mix

  • Finally add the roasted cashew and raisins and mix well

  • Take out from kadai and let it cool

  • Melting White Pumpkin Mash (Kasi Halwa) ready
