Veggie Patty is eNalabaag's special recipe. A delicious and crispy treat for the one who likes patty. It contains all spices, veggies and flours which gives a healthy supplement.

Making of Veggie Patty

Ingredients for Patty

  1. Potato 3 medium sized

  2. Carrot 1

  3. Beans 5

  4. Corn

  5. Onion

  6. Ginger 1 inch

  7. Garlic 5-6 cloves

  8. Green Chilli 2

  9. Garam Masala

  10. Pepper Powder

  11. Dhaniya Powder

  12. Cumin Powder

  13. Red Chilli Powder

  14. A pinch of Turmeric

  15. Corn Flakes Crumbs or Bread Crumbs

  16. Salt to taste

  17. Coriander Leaves

  18. Oil as required

Ingredients for Batter

  1. Corn flour 3 tbsp

  2. Rice flour 3 tbsp

  3. Besan flour 2 tbsp

  4. Salt as required

  5. Water as required

Veggie Patty making process

Backing Veggie

  1. Peal potato and carrot, roughly cut and take beans, carrot, and corn separately in a plate

  2. Keep the potato in a water bowl for baking. Cover the bowl with a plate and keep carrot, beans, corn on the plate and bake it in a pressure cooker for two whistles

  3. Switch off the flame and let it cool down

  4. Once cooled take out and drain the veggies. Dry these veggies in a muslin cloth or kitchen towel (Important to get a crispy patty)

  5. Smash the potato and finely chop carrot and beans and keep it aside

Making corn flakes or bread crumbs

  1. Take corn flakes or breads and add it in mixer grinder

  2. Roughly grind and do not make fine powder and keep it aside

Making batter for patty dipping

  1. Take a bowl, add 3 tbsp corn flour, 3 tbsp rice flour, 2 tbsp besan flour and salt to taste

  2. Add little water and give a good mix till you get the dipping consistency batter and keep it aside

Making ginger garlic crush

  1. Take a mixer grinder and add ginger, garlic and green chilly

  2. Roughly grind and keep it aside

Stir Fry Onions

  1. Take a tawa and add 2 tbsp oil

  2. When oil becomes hot put ginger garlic chilly crush and saute for a few seconds till aroma goes off

  3. Add finely chopped onions and fry till onion becomes translucent

  4. Adding salt at this stage is optional (we are going to mix it with veggies)

  5. Keep it aside, let it cool down

Mixing for Patty

  1. In a bowl take potato and smash it

  2. Add finely chopped carrot, beans and corn (backed green peas can also be added)

  3. Add finely chopped coriander leaves

  4. Add pepper powder, cumin powder, garam masala, dhaniya powder, a pinch of turmeric, red chilli powder, stir fried onion, salt to taste, and corn flakes crumbs or bread crumbs

  5. Give a good mix

  6. With this mix make a round shaped patty and keep it aside

Shallow Frying Veggie Patty

  1. Take the raw patty and dip it in the batter coating all sides of the patty

  2. Now cover up the dipped patty in corn flakes crumbs or bread crumbs and when 4 patty's are ready

  3. Take a frying pan and add 2 to 3 tbs oil and keep the stove in a medium flame

  4. Place the patty's one by one and let it get fried on one side

  5. When one side gets golden brown turn to the other side and fry it (shallow fry on a pan, do not deep fry)

  6. When both sides got fried to a golden brown, take out from the pan and continue the same with other patty's

Crispy Veggie Patty is ready, serve hot with tomato sauce and enjoy the food.
